The concept of wedding catering has risen to a whole new level. Newlyweds have started a trend of requesting the catering services of food trucks.

Cathy Szabo and her husband Danny, owners of Szabo’s Seafood restaurant in Shelton, are one example of wedding caterers who have become mobile.

The Szabo’s have provided full service catering at weddings and other various events for more than 20 years. But last December they decided to expand their business after they purchased a red box car from a couple who was moving out of state, said Cathy.

“They were moving to Florida and they didn’t have any place to put this box car,” she said. “They dropped it off at our house. My husband looked at it and said ‘Cathy I think it’s time we do a truck; I really think it’s a great idea.’

Although they have only catered a handful of weddings, Cathy said she and Danny have gotten a lot of phone calls requesting their catering services. But Cathy expects to receive more business after she and Danny run their annual wedding expo in Trumbull’s Connecticut Bride Magazine.

“This past year was the first year we did not do it because we weren’t sure how to present ourselves,” Cathy said. “We started in December. It’s pretty new. We weren’t sure where we were going to take it or how many people were going to be interested in moving forward with it and we got a good response.”

Most of the weddings they’ve catered so far have been held at private homes. But Cathy said she Danny have also catered a few weddings at Lighthouse Point in New Haven.

“It’s a newer concept, “Cathy said. “A lot of people are hiring more than one truck at their wedding. They’ll have us doing seafood and the pizza guy doing pizza and the cupcake guy doing cupcakes.”

Some of the food trucks that Cathy and Danny have encountered while catering weddings include Big Green Pizza Truck, Caesar’s Grilled Cheese Truck and The Cupcake Truck.

The most popular food that newlyweds and their guests seem to crave from the Szabo truck are lobster rolls, fried shrimp and fried scallops. Cathy said their truck also offers fish and chips and salmon and sword burgers.

In addition to catering weddings, Cathy and Danny also offer their catering expertise to those who wish to celebrate other events. As part of the service, they offer different packages to fit the needs of the customers.

Cathy said their first client for the seafood truck was Yale University.

“We were doing a lot of events in Yale for the hospital and also for the school,” Cathy said. “The kids would come outside and the food truck would be out there.”
